tandoori paneer tikka

panner - cubed - 1 cup
capsicum (red and green) - cubed - 1 cup
onion diced - 1 cup

curd - 1 /2 cup
chillie powder- 1 tsp
dhaniya powder- 1 tsp
turmeric powder- 1 tsp
jeera powder- 1/2 tsp
ginger - garlic paste - 1/2 tsp
salt to taste

mix all the ingredients and marinate the panner and diced veggies, mix well and refrigerate a for abt 3 hrs .
poak each of 1 veggie and a panner cube in a tooth pick ,bake it for 10mts or grill it in a micro wave till done

alternatively or u can also tawa it with lil oil and cook till it turns golden brown (then arrange in a tooth pick)

cabbage with moong dhal

Ingredients
grated cabbage - 1 cup
moong dhal (split)-1 cup
coconut - 1/2 cup
jeera - 1 tsp
curry leaves - 1 tsp
urudh dhal - 1tsp
ghee- 1/2 tsp
hing - 1/2 tsp
salt to taste
red chillies- 1or 2

pressure cook moong dhal with cabbage for 2-3 whistle.
make a paste of coconut and jeera and add this to the dhal ,mix well and bring to boil add curry leaves,hing and salt. tadka with red chillies and urudh dhal in ghee and mix well.

methi moong

Ingredients

onion -1
tomato - 2
garam masala- 1 tsp
ginger garlic paste - 1/2 tsp
whole moong (green gram)- 1 cup
kassori methi - 1/2 cup
salt to taste.
oil - 2 tsp
dhaniya powder,chillipe powder and jeera powder- 1 tsp each.

blanch the onion and tomato (boil it in water for 5mts)and make a puree f it. in a cooker add oil, then add the onion-tomato puree and saute for 5 mts.add ginger garlic paste and saute again. add dhaniya powder,chillipe powder and jeera powder,add the green gram and kassori methi and saute .add salt and water 1 cup and pressure cook for 3 -5 whistle.garnish with coriander leaves.
serve hot with chappti or roti

Bindi masala

Ingridents:

cleaned and chopped bindhi - 1 cup( 1/2 an ich long )
oil- 2 tsp
salt to taste
lemon juice- 1 tsp

grind to paste:
onion - 1
red chillie powdr - 1/2 tsp
jeera powder- 1/2 tsp
dhaniya powder- 1/2 tsp

In a kadai add the oil ,then the ground paste,when the oil leaves the side add the bindi and mix well.cook till bindis are done and squeeze a lime and switch off the stove.
yummy bindi masala is ready..

spicy onion potato curry(dry subzi)

Ingredients

onion - 1 finely diced into cubes
potato - 4 (skin peeled and diced into cubes)
sambhar powder- 1 tsp
salt to taste
1/2 cup of water


for tadka
mustard seeds- 1/2 tsp
urudh dhal and chenna dhal - 1/2 tsp each.
oil- 2 tsp
curry leaves - a few

in a pan add oil , add mustard seeds,chenna dhal and urudh dhal,when it turns golden brown add the curry leaves and then onion,when it turns pinkish add the potato and sambhar powder and saute for another 1 mt then add water and salt close the lid and simmer and cook till potato's are soft and done.

u can eat it with rice,roti, dosa ...

chole bhatura

Ingredients

for chole:
1 cup Kabu chenna
1/2 cup black chenna
1 onion
2 tomato
1 tea bag
ginger 1 inch grated
garlic - finely chopped
mtr chole masala - 1 tsp
dhaniya powder- 1/2 tsp
chillie powder - 1/2 tsp
jeera powder - 1/2 tsp
salt to taste
oil 2 tsp.

For bhatura
1 cup maida
curd to knead the dough
oil 1 tsp
salt to taste.

mix all the ingredients and keep aside for abt 3 - 4 hrs.

For the gravy:

soak the chenna over nite and pressure cook it along with a T-bag(for the colour)
drain the water and keep aside.
blanch the onion and tomato and make a puree of it along with ginger and garlic.

in a pan add oil , add the puree ,when oil leaves the side add all the dry masala powder and fry for another 1 mt,add salt and then add the drained water in which u cooked the chenna. bring it to boil
now mash a handful of chenna in a mixie and add this to the gravy, add the cooked chenna and bring to boil ,adjust the consistany by adding water.
add grated ginger and coriander leaves and ur chenna is ready.
for the bhatura.
take a lemon size of the dough and spread it with ballen
(u can dust it with maida) normally ppl use oil and dont dust it .. but then its ok..
deep fry in hot oil like how u make poori's..
servew it with chole masla!!!!!!!!


ghate ki subzi

Ingredients:


for the ghate
gram flour - 1 cup
red chillie powder,dhaniya powder ,jeera powder - 1/2 tsp each
ajwain - 1/4tsp
oil- 1 tsp
salt to taste.
water to kneed the dough.

for tadka
mustard seeds- 1/2 tsp
fennel seeds - 1/2 tsp
methi seeds- 1/2 tsp
curry leaves - few
oil- 1 tsp

for the gravy
onion - 1
tomato - 2
garlic -2 pods
ginger - 1 inch
curd - 1 cup
elachi,bay leaf,clove and Cinnamon (1 inch long)- 2 each
salt to taste
red chillie powder,dhaniya powder and jeera powder - 1 /2 tsp
oil 2 tsp
coriander leaves- 1 tsp


for making the ghattas..

mix all the ingredients and make a dough . roll them out in cylinders .in the mean time boil a pan ful of water. drop these cylinders in boiling water and let it cook for 10mts.

now cut these in to small parts .
in a pan add lil oil add all the tadka items and add the ghatas and stir it and cook for 3-4 mts.

for the gravy..
blanch the onion and tomato and make a puree of it .
add oil in a pan add Cinnamon,ginger,garlic,bay leaf,elachi clove and mix well,add the puree and cook till oil leaves the side.add the curd and simmer the stove. now add salt, ,let it cook for a 2 mts.. now add the ghattas and close the lid and cook for another 5mts .

serve hot with roti or phulka

gobhi manchurian

Ingredients:
gobhi flowereets(cleaned )- 1 cup
corn flour - 1/2 cup
rice flour 1/4 cup
maida - 2 spoon
soya sauce - 2 tsp
red chillie powder - 1/2 tsp
salt to taste
oil for deep frying

clean and cut the cauliflower into small floweretts
mix all the other ingredients and marinate the cauliflower for abt 30mts
now deep fry these and keep aside
for the gravy:
finely sliced onion and capcicum - 1/2 cup
ginger and garlic sliced- 1/2 tsp
soy sauce-1/2 tsp
chillie sauce -1/2 tsp
vinegar-1/2 tsp
ajno motto (i dont use it)but it sure gives a nice flavour - a pinch
tomato sauce - 1/2 cup
1 spoon corn flour mixed in 1/2 cup of water
oil- 2 tsp
in a pan add the oil, add ginger garlic pods,then add onion and capsicum let it get cooked for 2 mts .. add all the sauce and saute for another 1 mt then add vinegar and the corn flour paste and mix well. it will become one thick gravy..

now when u r about to serve just mix both the fried cauliflower and gravy and saute for a minute.
don't mix and store it for a long time,it will not be crisp. so mix and eat it !!

dal tadka

Ingredients

thuvar dhal - 1/2 cup
moong dhal - yellow split - 1/2 cup
onion - 1
green chillies -2
grated ginger - 1/2 tsp
garlic pods - 4 finely chopped
kasuri methi - 1 tsp
coriander leaves - 1/4 cup
for tadka:

a pinch of hing and
a pinch of turmeric powder
1/4tsp of oi/ghee for tadka

Pressure cook the dhal with a pinch of turmeric powder and slit green chillies,finely chopped onion and grated ginger and chopped garlic , for abt 3 whistles and simmer for 5 mts and switch off the stove. when the pressure is released ,bring this to boil add kasuri methi and coriander leaves,tadka with rai and jeera and serve hot with roti or phulka..




veg stir fry - desi cum chinese way

Ingredients

onion - 1
tomato- 1
carrot- 1
beans 4-5
baby corn 4-5
capsicum - 1/2 (any or all colours of yellow,green and red)
u can also add cabbage and peas, cauliflower(i was running out of stock and didn't add)
ginger garlic paste - 1/2 tsp
pepper powder - 1/2 tsp
soy sauce - 1/4tsp
tomato sauce - 1 tsp

dice all the veggies to same size or slice it into same length.
now in a kadai add 1 tsp of oil ,then add ginger garlic paste ,add onion and fry for 1 mt
then add capsicum and fry for another 1 mt,in the meantime cook carrot and beans separately (just half -cook)that's enough,now mix the carrot and beans to the pan,now add tomato's and stir fry it,add salt,pepper powder and soy sauce ,mix well and finally add tomato sauce and saute it for a mt and your veg stir fry is ready to be served.



palak panner

Ingredients :

 palak - 4 bunches
onion - 2
tomato - 2
ginger 1 inch 
garlic pods - 4
green chillies- 2
red chillie powder - 1/2tsp
dhaniya powder 1/2 tsp
garam masala - 1/4tsp
salt to taste
panner cut into cubes - 1 cup


wash and clean the palak,pressure cook for 3 whistles.
cut the onion and tomato into big cubes.
in a kadai add oil,when it turns hot, add ginger,garlic,green chillies saute for 1 mt then add onion and fry till it turns pinkish,add tomato and cook for another 2-3 mts.then add dhaniya powder,chillie powder and garam masala  ,mix well and switch off the stove. puree this along with the palak .now boil this puree add panner cubes and cook on low flame for 2-3mts and ur palak panner is ready!!!!!!!

mixed veggie gravy

 Ingredients:

onion - 1 
tomato - 2 
 mixed veggies like carrot,beans,cauliflower,baby corn,potato) - semi cooked - 2 cups
garlic  - 2  pods finely chopped
ginger - 1 inch finely grated
red chillie powder- 1/2 tsp
dhaniya powder - 1/4 tsp 
jeera powder - 1/4 tsp

 blanch the onion and tomato( put them in boiling water  for 5mts) and make a puree of it 
now in a kadai add lil oil add the onion tomato puree  cook for 5mts then add  ginger and garlic and all the masala powder and cooked veggie,cover the lid and cook in simmer so that the essence will get inside the veggies  ,keep stirring   add finely chopped coriander leaves and serve it with roti!!

matter panner

Ingredients



green peas - 1 cup
panenr cut into cubes - 1 cup

onion - 2
tomato- 3
ginger - 1 inch 
green chillies - 2 
garlic - 2-3 pods

dhaniya powder- 1 tsp
chillie powder - 1/2 - 3/4 tsp
turmeric powder a pinch
jeera powder- 1/2-3/4 tsp
garam masala powder - 1/2 tsp



oil or butter for frying - 1 tsp


 in a kadai add water and blanch the onion and tomato  till cooked(say at 5 mts)then grind to a fine paste
also  grind ginger,garlic and green chillie to a paste and keep aside)


now in a kadai 
add oil or butter, add the tomato-onion puree cook till  oil leaves the side then add all the masala powder and fry for just 30secs,simmer and add water,
in the mean time  add peas and panner to boiling water and keep boiling for 5mtsso that they turn soft,drain and mix it with gravy  add corainder leaves and close the lid and simmer for few mts so the flavour gets inside the panner.. 


serve hot with phula or paratha ..



olan

Ingredients

white pumpkin (diced)- 1 cup
yellow pumpkin(diced)- 1 cup 
 green gram  (preferably sprouted)- 1/2 cup
long beans - (cut into 1inch length) - 1/2 cup
grated coconut - 1/2 cup
green chillies- 2
coconut oil - 1/2 tsp
curry leaves 




p.s  i didn't have long beans so didn't use it while preparing olan.
 in a  vessel add all the vegetables and green gram and enough water and bring it to boil 
cook till  the veggies are done and soft,in the meantime  grind the  coconut and green chillie to fine paste.
once the veggies are cooked strain of the excess water,mix the coconut-green chillie paste and add 1/4 tsp coconut oil  ur olan is ready!!!

Aloo Palak

 all u need:

 palak  - 3 bunches
onion- 1 big
tomato - 1 medium size
ginger - 1 inch garlic - 4 pods
green chillies - 3 
aloo - boiled and skin peeled and diced - 1 cup 
dhaniya powder - 3/4 spoon
chillie powder - 1/2  -  1 spoon based on u r spice level or even less
jeera powder - 1 spoon
turmeric powder - 1/4  tsp
garam masala - 1/2 tsp 
 oil - 1 tbsp



 in a pan add oil ,let it heat a little then add ginger ,garlic fry for few seconds then add green chilies and then onion fry till it turns golden brown add tomato and fry for another 1 minute then add all the masala powder and salt and fry for just few seconds add  washed cleaned palak and coriander leaves  then  add very little water fry  it till  it is cooked . cool and grind to paste .. 

 in a kadai add this past and diced aloo and  simmer stove and close the lid for 5mts .. ur aloo palak is ready....



 serve hot with phulka or roti or paratha...
