Thair sadam (a) curd rice

Ingredients:

cooked rice - 1 cup
curd - 1 cup
grated ginger 1/2 tsp
coriander leaves - 1/2 tsp
curry leaves crushed - 1/2 tsp
cashew nuts - 4 (split) (optional)
raisins - 4 -5 (optional)
salt to taste
a pinch of hing


for tadka
1/2 tsp oil
1/2 tsp mustard seeds.


optional Ingredients
cucumber, mango, grapes ,anar ( u can use either 1 of these cut into small pieces and add it to the curd rice)

mix the rice with curd and mash it nicely. add grated ginger,cut green chillies,coriander leaves ,curry leaves,salt and hing, mix well, season it with mustard seeds. u can add cashew nuts ,raisins and any other optional ingredient as mentioned above. it does taste good without these too!!!!!!

dal tadka

Ingredients

thuvar dhal - 1/2 cup
moong dhal - yellow split - 1/2 cup
onion - 1
green chillies -2
grated ginger - 1/2 tsp
garlic pods - 4 finely chopped
kasuri methi - 1 tsp
coriander leaves - 1/4 cup
for tadka:

a pinch of hing and
a pinch of turmeric powder
1/4tsp of oi/ghee for tadka

Pressure cook the dhal with a pinch of turmeric powder and slit green chillies,finely chopped onion and grated ginger and chopped garlic , for abt 3 whistles and simmer for 5 mts and switch off the stove. when the pressure is released ,bring this to boil add kasuri methi and coriander leaves,tadka with rai and jeera and serve hot with roti or phulka..




idiyapam

Processed rice - 1 cup
water to knead the dough
for flavouring (optional)
grated coconut - 1/2 cup
ghee- 1tsp
sugar - 1 spoon

for processing the rice
method - 1

take equal parts of raw rice and boiled rice and give it in flour mill and make a fine powder

method -2
soak raw rice for 10mts ,drain and spread the rice in a towel and let it fry, give this to flour mill and make a very fine powder

this rice flour can be stored in air tight container for months together.

now

In a pan take a handful of this processed rice flour ,in the mean time boil enough water to knead the dough.
now to the rice flour add salt and a tsp of ghee and mix well, pour in hot boiling water and mix well with a spoon,

once it cools down to the temperature ucan withstand ,knead it with ur hand and make a soft dough. now fill this dough in a chakli presser.
in the mean time grease the idly plate with ghee .now press these idiyapam in the idly plate ,add grated coconut on top and steam it for 10-15mts.

sprinkle some sugar on top and serve hot.




note if u want a spicy version
grind together few pudhina (mint leaves )with 2 green chillies and coriander leaves make ap uree and add that to boiling water and mix with the processed rice flour.no need for sugar or coconut in this case.

veg stir fry - desi cum chinese way

Ingredients

onion - 1
tomato- 1
carrot- 1
beans 4-5
baby corn 4-5
capsicum - 1/2 (any or all colours of yellow,green and red)
u can also add cabbage and peas, cauliflower(i was running out of stock and didn't add)
ginger garlic paste - 1/2 tsp
pepper powder - 1/2 tsp
soy sauce - 1/4tsp
tomato sauce - 1 tsp

dice all the veggies to same size or slice it into same length.
now in a kadai add 1 tsp of oil ,then add ginger garlic paste ,add onion and fry for 1 mt
then add capsicum and fry for another 1 mt,in the meantime cook carrot and beans separately (just half -cook)that's enough,now mix the carrot and beans to the pan,now add tomato's and stir fry it,add salt,pepper powder and soy sauce ,mix well and finally add tomato sauce and saute it for a mt and your veg stir fry is ready to be served.



palak panner

Ingredients :

 palak - 4 bunches
onion - 2
tomato - 2
ginger 1 inch 
garlic pods - 4
green chillies- 2
red chillie powder - 1/2tsp
dhaniya powder 1/2 tsp
garam masala - 1/4tsp
salt to taste
panner cut into cubes - 1 cup


wash and clean the palak,pressure cook for 3 whistles.
cut the onion and tomato into big cubes.
in a kadai add oil,when it turns hot, add ginger,garlic,green chillies saute for 1 mt then add onion and fry till it turns pinkish,add tomato and cook for another 2-3 mts.then add dhaniya powder,chillie powder and garam masala  ,mix well and switch off the stove. puree this along with the palak .now boil this puree add panner cubes and cook on low flame for 2-3mts and ur palak panner is ready!!!!!!!

kara kuzhambu

Ingredients
 brinjal or drumstick - cubed - 1 cup 
sambhar powder - 1 tsp
dhaniya powder - 1 tsp
red chillie powder - 1 tsp
coconut grated - 1/4 cup
Poppy seeds - 1 tsp
 lemon sized imly soaked in 3 cups of water and drained

Seasoning:
mustard - 1 tsp
urudh dhal,chenna dhal - each 1 tsp
methi seeds - 1 tsp
garlic - 4 pods finly chopped
onion and tomato - 1 finely chopped
 oil for seasoning
salt to taste 
hing - 1/4tsp
 


In a kadai  add oil
add all the ingredients under the  seasoning column,  cook till done  ,add all the  powder(sambhar powder,dhaniya powder and red chillie powder) add cut brinjal or drumstick,add imly water and boil for 10mts ,in the mean time make a fine paste of coconut and Poppy seeds ,add this to boiling sambhar,mix well and switch off the stove.. u r kara kuzhambu is ready...

 Ingredients:
 processed rice flour - 1 cup
  urdudh dhal powder - 1 tsp(dry roast it and make a fine powder)
butter - 1 tbsp
hing 1/4tsp
red chillie powder - 1/2tsp - 1 tsp 
salt to taste
ground nuts - 1 tbsp.
 oil for deep frying

processing the rice flour:
 soak raw rice for abt 10mts ,drain and spread it in a towel,let it dry and  give it in flour mill and make a nice powder of it, now dry roast this powder in a kdai  for abt 2 mts.sieve it 



 now mix all the ingredients and make a chapati dough consistency. (note u can add green chillie paste instead of red chillie powder it tastes awesome



take a small ball  out of this and place it in ur palm ,pat it into a small circle with  the help of ur other hand fingers


,in the meantime  switch on the stove and heat oil in a kdai,  deep fry these thattai and its ready !!



 

badam burfi


Ingredients:

1 cup badam soaked in hot water and skin peeled 
1 cup powdered sugar
1/2 cup milk
kesar strands (optional)
1 tbsp ghee


 mix all the ingredients except ghee and grind to a fine paste.
now,in a kadai, add ghee and the paste and keep stirring,when it becomes a thick mass  switch off the stove and keep stirring for another 2-3mts, the whole process might take max of 10-12mts.
 pour it over a greased tray,cool down and cut into pieces.

theriti pal - gova

Milk - 8 cups
sugar - 1 cup 
ghee- 1 tsp 

In   a rice cooker add the milk and  let it boil (don't close the lid) its easy way then doing it in  a pan in a stove as u need to keep on stirring it . let it reduce to a thick  yellow paste consistency. now transfer it into a pan and add lil ghee(its mainly for the colour change) and when it thickens switch off the stove and ur pal gova or therti pal is ready. 
i do it for janmashtami as its baby krishna's fav sweet. had left over milk last week so did this  and its my son and hubbies fav too!!!!!!!!


manga pachadi - tamil new yr spl

ingredients

jaggery  grated - 1 cup
raw mango sliced - 1 cup
neem flower fresh - 1 tsp
salt to taste
mustard seeds- 1/2 tsp
methi seeds- 1/2 tsp 
ghee- 1/2 tsp 

mix water with jaggrey and keep aside 
in a  pan add mango pices and  add lil water and let it boil till mangos turn soft,now add the jaggery water and let it boil.in a pana dd lil ghee add musturd seeds,methi seeds and neem flowers and add this to boiling mango-jaggery water,let it boil for another 2 mts and manga pachadi is ready.
we do this for tamil new yrs day 

cucumber raitha

Ingredients:

curd - 1 cup
finely chopped cucumber - 1/2 cup
green chillie - 1 slit 
salt to taste 

grind together - a fine paste 
1/4th cup grated coconut 
1/2 tsp  mustard seeds 

 mix the curd and cucumber pieces,add the ground paste add salt and green chillie and ur  cucumber pachadi is ready, u can do the same with  mango, fried bindhi and grated carrot also. 
 it goes well with sambhar rice and bisebela bath



mixed veg and apple raitha

Ingredients:

apple  finely chopped- 1/2 cup 
cucumber finely chopped - 1/2 cup
grated carrot  -1/2 cup
finely chopped onion - 1/2 cup
green chillie - 1 slit
tomato finely chopped- 1/2 cup
curd 2 cups
salt to taste 

 mix all the ingredients and ur mixed veg-apple raitha is ready!! it goes very well with biriyani ,pulav or paratha or just plain roti...



mango apple papaya cocktail

Ingredients

mango  - 1/2 cup 
papaya - 1/2 cup
apple - 1/2 cup
juice of a lemon
juice of a musambi 
sugar - 1 or 2 tsp and that's optional

peel the skin of the fruits and dice them ,add all ingredients to the mixer along with ice cube and grind it to a fine juice.serve it chill.



tomato rice

Ingridents:
basmathi rice - 1 cup
water - 1 1/2 cups
elachi - 2 
bay leaf - 1 
clove - 2 
Cinnamon - 1 inch bar
green chillies - 1 or 2 slit into 2 
 onion finely sliced - 1 big
tomato - 2  cut into pieces
 ginger - 1 inch finely grated
garlic 2 or 3 pods - finely chopped.
oil +ghee- 1 tsp 
sambhar powder,dhaniya pwder and red chillie powder  - 1/2 tsp  each 

soak the rice  for a mt in water and drain and keep aside for 10-15mts 
In a cooker add the oil and ghee mixture ,add Cinnamon,elachi,clove and bay leaf,then add grated ginger and garlic then add green chillies, saute for a mint .then add onion and saute it for another 1 or 2 mts,then add tomato ,add the rice and saute for a mt or 2. then add salt ,sambhar powder,dhaniya powder and chillie powder  and mix well then and water ,close the lid and pressure cook for 3-4 whistle and ur tomato rice  is ready, u can add grated cheddar cheese on top .serve with mixed veg raitha .

Instant pepper puliyodharai

Ingredients:

cooked rice - 1 cup

grind together :
 lemon sized tamarind soaked in 1/2 cup of water  for 10mts
pepper corns - 1/2 tsp
thuvar dhal - 1/2 tsp
red chillies - 4 or 5 

for seasoning
ground nuts - 1 tbsp
mustard seeds - 1 tsp
chenna dhal and urudh dhal - 1 tsp each
curry leaves
salt and hing.
gingely oil - 1 tablespoon

 
 spread the cooked rice in a plate and bring it to room temperature

make the paste of tamarind  with other ingredients mentioned under " grind together".
in a kadai 
add gingely oil  .season it with mustard seeds,urudh dhal,chenna dhal, let it turn golden brown add hing ,currly leaves add the ground paste and cook till oil leaves the side add salt . now mix this paste with the cooked and cooled rice . ur instant mulagu puliyodharai is ready..serve it with some papad .


mixed veggie gravy

 Ingredients:

onion - 1 
tomato - 2 
 mixed veggies like carrot,beans,cauliflower,baby corn,potato) - semi cooked - 2 cups
garlic  - 2  pods finely chopped
ginger - 1 inch finely grated
red chillie powder- 1/2 tsp
dhaniya powder - 1/4 tsp 
jeera powder - 1/4 tsp

 blanch the onion and tomato( put them in boiling water  for 5mts) and make a puree of it 
now in a kadai add lil oil add the onion tomato puree  cook for 5mts then add  ginger and garlic and all the masala powder and cooked veggie,cover the lid and cook in simmer so that the essence will get inside the veggies  ,keep stirring   add finely chopped coriander leaves and serve it with roti!!


peas pulav

Ingredients:

 fresh peas - 1/2 cup
basmathi rice - 1 cup
water - 1 1/2 cups
elachi - 2 
bay leaf - 1 
clove - 2 
Cinnamon - 1 inch bar
green chillies - 1 or 2 slit into 2 
 onion finely sliced - 1 big
 ginger - 1 inch finely grated
garlic 2 or 3 pods - finely chopped.
oil +ghee- 1 tsp 




soak the rice  for a mt in water and drain and keep aside for 10-15mts 
In a cooker add the oil and ghee mixture ,add Cinnamon,elachi,clove and bay leaf,then add grated ginger and garlic then add green chillies, saute for a mint .then add onion and saute it for another 1 or 2 mts,then add green peas ,add the rice and saute for a mt or 2. then add salt and water ,close the lid and pressure cook for 3-4 whistle and ur instant peas pulav is ready, u can add grated cheddar cheese on top 




akara vadisal- sweet rice with jaggery

Ingredients:
1 cup rice
1/2 cup moong dhal
5 cups milk 
1 cup  ghee
jaggery grated - 2 cups 
a pinch of nutmeg and elachi powder
 fried cashew nuts and raisins - 1/4 cup.



pressure cook rice and moong dhal with milk ?(dont add water,use milk  only..) u can add even 1 cup more milk  , let it go for 3 whistle and simmer it for 10mts , once the pressure releases,  open the cooker and mash it nicely,in the meantime  add lil water and add jaggrey and bring to boil?(strain and remove any dust particles) now let it boil for few mts and add this jaggery water to rice +moong dhal and mix well  keep it on stove on simemr and let it boil for few mts then add ghee and mix well ,u can add more ghee also to make it even more rich  ,let it cook in simmer for another 5 -10mts add elachi and nutmeg powder and fried cashew and raisins. 
its just yummylisious!!!!!!!



Aloo paratha

Ingredients:
for the stuffing : 

cooked and mashed aloo - 1 cup
 pepper powder - 1/2 tsp
red chillie powder - 1/2 tsp
jeera powder - 1/2 tsp
salt - 1/4 tsp 

for the   paratha
 atta- 2 cups
salt a pinch 
luke war water to kneed the dough

kneed the dough and keep aside for 30mts ,u can add a  pinch of turmeric powder and that's optional.

 now  mix all the ingredients under the stuffing column and make small balls from it.


now take a portion of the dough and spread it with ur hand stuff 1 aloo ball and close it, dust it with atta flour and roll it into a paratha.


cook on both sides with lil oil and ur aloo paratha is ready.. serve hot with raitha or pickle


Onion Uttapam

 Ingredients:

Dosa batter - 1 cup 
chopped onion - 1 cup

In a tava add very little oil and saute the onion till golden brown add a  pinch of salt to it.


now pour a  small katori full of dosa batter in a  tava  dont spred it ,simmer the stove and sprinkle some  fried onion to it,add lil oil and cook on both sides till done ,serve hot with chutney or podi.



Methi paratha

 Ingredients:

1 cup finely chopped fresh methi leaves 
a pinch of turmeric powder
1/4tsp of red chillie powder
a tsp of ghee or oil 
1 cup atta  flour
salt to taste 
Luke warm water to kneed the dough 


 mix all the ingredients and make a tight thick dough.
roll out  like a normal roti and cook on both sides on a tava with lil oil or ghee 
 ,serve hot with  curd or raitha or any gravy or just pickle ..

Dal-Cucumber salad

Ingredients:

 finely diced cucumber - 1 cup
yellow split moong dal - 1/2 cup
green chillie- 1 
coriander leaves - 1 spoon 
hing - 1 pinch
salt to taste
lemon juice - 1/2 spoon
 for tadka  mustard seeds - 1/2 tsp
grated coconut - 1 spoon
 

 soak the moong Dal for abt 30mts .. drain of excess water . add all other  remaining items  and  tadka with mustard seeds.. ur yummy salad is ready.. u can also add grated carrot,cut mango pieces (P.s i didnt have them when i prepared so didnt add it ..) it will taste yummy spply for this hot Summer its a must !!!!!

Rava dosa


Ingredients:
Sooji - 1 cup
maida - 1/3  cup
rice flour - 1/3 cup
curd 1/2 cup
green chillies - 2 or 3  finely chopped
onion - 1  big finely chopped
jeera - 1 tsp
curry leaves and coriander leaves - 1 spoon
salt to taste
water  






Mix all the ingredients and keep aside for about 30 mts.. the batter should be runny and watery.. 



Heat a tava  and spread the batter  cook on high flame on both side with oil.it will take little more time than a dosa (lil more oil also) 

serve hot with sambhar or chutney..

easy schezwan rice

Ingredients:

 long grain rice     -1 cup 
carrot ,beans,cabbage,capsicum(diced) - 1 cup
green peas(cooked) -1 /4 cup
onion - 1 diced
tomato- 1 diced 
panner cubed - 1/2 cup
 oil or butter - 1 tsp
soy sauce - 1/2 tsp
vinegar - 1/2 tsp 

grind to paste:
red chillies- 4
green chillies- 2
garlic pods- 5
ginger - 1 inch 



clean and soak the basmathi rice in water for 3 mts.drain the water and keep the rice aside.

in a kadai add oil or butter ,let it melt then add onion,fry till  pinkish,then add tomato and cook for another few mts.then add all the veggies and mix well,add panner cubes ..  in the mean time  grind  a fine paste of ingredients under the column:grind to a paste" and mix with soy sauce and vineger ,mix this with the veggies add  11/2 part of water and let it boil,mix the rice and add enough  salt


now transfer it the contents in to a rice cooker or a normal pressure cooker and cook for 5 whistles and switch off .. ur garam garam hot schezwan rice is ready....




serve hot ...


matter panner

Ingredients



green peas - 1 cup
panenr cut into cubes - 1 cup

onion - 2
tomato- 3
ginger - 1 inch 
green chillies - 2 
garlic - 2-3 pods

dhaniya powder- 1 tsp
chillie powder - 1/2 - 3/4 tsp
turmeric powder a pinch
jeera powder- 1/2-3/4 tsp
garam masala powder - 1/2 tsp



oil or butter for frying - 1 tsp


 in a kadai add water and blanch the onion and tomato  till cooked(say at 5 mts)then grind to a fine paste
also  grind ginger,garlic and green chillie to a paste and keep aside)


now in a kadai 
add oil or butter, add the tomato-onion puree cook till  oil leaves the side then add all the masala powder and fry for just 30secs,simmer and add water,
in the mean time  add peas and panner to boiling water and keep boiling for 5mtsso that they turn soft,drain and mix it with gravy  add corainder leaves and close the lid and simmer for few mts so the flavour gets inside the panner.. 


serve hot with phula or paratha ..



phulka roti

Ingredients

wheat flour - 1 cup
Luke warm water (enough to kneed the dough)
a pinch of salt 
a spoon of milk 


 mix all the ingredients and make a tight dough 
keep aside for 10-15mts..
the rolling part is really important for  puffing of phulkas.. 
 there should not be any pores after u roll out (just lift and c thru the rolled chapatti )
also the ends should not crack,it should be perfect in shape(if it cracks add lil water or milk and kneed again)
 now roll it with a  bellen(make it small than a normal chapatti)
 in the mean time pre heat the tava  and simmer it..
cook on 1 side  for abt 30-40 sec and turn and cook on another side for 30- 40 sec again turn and cook on the first side for  another 30 secs ..


switch on the other stove and using the grill plate cook  put the top side of chapatti on the grill plate and cu r phulka puffing up!! :)
turn and cook on another side also!!!



try it out just like this Ur phulka will look like poori!!!!!!
